No sugar added jelly roll for Christmas Yule log recipe

Ingredients

  • 2 cups of all-purpose flour
  • ½ teaspoon (tsp) of salt
  • 2 teaspoons (tsp) of baking powder
  • 4 eggs
  • 2 tablespoons (tbsp) of Splenda
  • 1 cup of milk
  • 2 teaspoons (tsp) of vanilla extract
  • 1 cup of sugar free jam

Directions

  1. Preheat your oven to 350 degrees.
  2. Sift the flour, salt, and baking powder into a large bowl.
  3. Break the eggs into a mixing bowl.
  4. Using the wire whisk attachment on your mixer, whisk the eggs on high speed for ten minutes, adding the Splenda a little at a time.
  5. Heat the milk until it is slightly warm (about 20 seconds in a microwave).
  6. Add the milk to the mixing bowl.
  7. Switch to the paddle attachment on your mixer.
  8. With the mixer on low speed, add the dry ingredients a little at a time until fully combined.
  9. Line a small sheet pan with parchment paper and spray with non-stick spray.
  10. Pour the batter onto the parchment paper and spread it evenly.
  11. Bake for 15 minutes.
  12. Remove the pan from the oven.
  13. Flip the pan upside down on a clean work surface and pull the parchment paper off of the cake.
  14. Let the cake cool.
  15. Place the cooled cake on a length of plastic wrap.
  16. Spread the jam on the cake.
  17. Roll the cake toward you until it looks like a log.
  18. Cut a corner piece at an angle to represent a tree stump, and put it on top of the roll at the center.
  19. Garnish with sugar-free candies and chocolate.
  20. Dust with sugar substitute.

Notes

Your measuring spoon set may have tbsp, TBS, T, TB, or Tbl on it. They all mean tablespoon.
