Tomato-basil relish recipe

Ingredients

  • 3 pounds (lbs) of tomatoes, peeled, seeded, and diced
  • 1 small diced onion
  • 2 cloves of garlic
  • 1 cup (c) of fresh, shredded basil
  • 3 ounces (oz) of vegetable oil
  • 1 ounce (oz) of balsamic vinegar
  • Salt to taste
  • Black pepper to taste

Directions

  1. Combine the tomatoes, onion, garlic, and basil in a large mixing bowl.
  2. In another bowl, combine the oil and vinegar to make a dressing.
  3. Season the dressing with salt and pepper.
  4. Add the dressing to the tomato mixture and combine to coat well.
  5. Let the mixture sit for 15 to 30 minutes to marinate.
