Heart healthy sautéed beef tips recipe

Ingredients

  • ½ pound (lb) of all purpose flour
  • 1 teaspoon (tsp) of salt
  • 4 pounds (lbs) of trimmed and cubed lean beef tips
  • 2 ounces (oz) of vegetable oil
  • 4 ounces (oz) of diced onions
  • 2 ounces (oz) of diced celery
  • 2 ounces (oz) of diced carrots
  • 5 minced garlic cloves
  • 1 ounce (oz) of red wine
  • 2 ounces (oz) of tomato paste or puree
  • 1 pint (pt) of low fat, low sodium beef stock
  • Black pepper to taste

Directions

  1. Mix the flour and salt in a bowl.
  2. Dredge the beef tips in the flour mixture and shake off any excess flour.
  3. Heat a pan over medium heat.
  4. Add the coated beef tips and sear them on all sides.
  5. Add the onions, celery, and carrots.
  6. Sauté for 3 to 5 minutes.
  7. Add the garlic.
  8. Cook for 1 minute.
  9. Add the tomato paste or puree.
  10. Stir until heated through.
  11. Deglaze the pan with the red wine and beef stock.
  12. Bring the mixture to a boil.
  13. Reduce to a simmer and let it cook until the beef is tender.
  14. Serve with egg noodles or mashed potatoes.
  • You can add mushrooms to this recipe.
  • Makes 12 4-ounce (oz) servings
