Roasted garlic mashed cauliflower recipe

Ingredients

  • 1 whole bulb of garlic
  • 1 whole head of cauliflower
  • 2 teaspoons (tsp) of fresh thyme (optional)
  • ½ teaspoon (tsp) of salt
  • ½ teaspoon (tsp) of black pepper
  • Olive oil

Directions

  1. Preheat oven to 375°.
  2. Cut the cauliflower head into individual florets.
  3. Cut off the very top of the garlic bulb, exposing the cloves (about ¼ to ½ inch).
  4. Drizzle olive oil over the exposed garlic cloves.
  5. Wrap the garlic bulb in aluminum foil and put it in the oven until it’s soft (about 40 to 50 minutes).
  6. Set the garlic bulb aside to cool.
  7. Place a colander or strainer in a pot.
  8. Add 2 to 3 inches of water to the bottom of the pot.
  9. Place the cauliflower florets in the strainer.
  10. Bring the water to a boil.
  11. Cover the pot.
  12. Steam the cauliflower until it is very tender (about 10 to 15 minutes).
  13. Put the cauliflower, garlic cloves, thyme, salt, and pepper in a food processor.
  14. Blend the mixture until it is the consistency of mashed potatoes.
  15. Add salt and pepper to taste.
